Bhuna Khichuri

In this preparation Rice and Dal is roasted in ghee , hence the name 'bhuna', and cooked in aromatic spices usually as an offering during pujas as 'bhog' or prasad. A must during festive season , this khicuri is a richer version of normal khichuri and is known to be favorite of Swami Vivekananda.

  1. Moong Dal...1 cup
  2. Govindo Bhog Rice...1 cup
  3. Cashew nut... 2 tbsp
  4. Raisins...2 tsp
  5. Bay leaf...2
  6. Cloves, cardamom...4
  7. Green chili...4
  8. Ghee or clarified butter...2 tbsp
  9. Salt...to taste
  10. ...makes about 4 servings
  1. Heat ghee in a pan. Add bay leaf , cloves , cardamom and saute till aromatic.
  2. Add Moon Dal and rice , saute in medium to low heat for 5 minutes or till rice-moong no longer sticks to the pan.
  3. Add about 2 cups hot water or such that water level is 1" above rice-moong mixture.
  4. Add cashew nuts , raisins , salt to taste , cover and cook in low heat(seam) for about 12 minutes or till water is completely evaporated.
  5. Remove from heat and serve hot with Cholar Dal , Kumro Bhaja or as a standalone dish.
