Aloo Methi Paratha

One of very common everyday recipe , paratha stuffed with mashed potato and dried fenugreek leaves and baked crisp.The main attraction of this recipe is the heavenly aroma of dried fenugreek leaves.

  1. Potato ... 2 , boiled and mashed
  2. Fenugreek Leaves ... 1 tbsp , dried
  3. Red Chili Powder ... 1/4 tsp
  4. Whole wheat ... 3/4 cup
  5. All Purpose flour ... 1/4 cup
  6. Coriander Leaves ... 1/4 cup , finely chopped
  7. Oil ... very little
  8. Salt ... to taste
  9. ....makes about 8 parathas
  1. Mix whole wheat , all purpose flour , pinch of salt and make a soft dough.
  2. Cover the dough with a moist cloth and keep for 15 - 20 minutes. This allows the protein in the all purpose flour to stretch and give the dough a good bind.
  3. Mix mashed potatoes ,kasuri methi or fenugreek leaves, red chili powder, salt to taste and divide into equal portions.
  4. Take a portion of the dough , make small circular rotis , rolling the edges thin and keeping the centre thick.
  5. Stuff the small rotis with a portion of the potato and secure the edges.
  6. Sprinkle wheat and roll out into parathas.
  7. To make square shapes , after stuffing with potato , fold the opposite ends in the manner of an envelope , press and roll ..the shape will be square.
  8. Add oil in a frying pan , bake parathas on both sides till crisp and serve with mixed pickles.
