Aloo Dum with Luchi

One of the signature breakfast recipes in Bengal , baby potatoes are cooked in yoghurt gravy and served with puffed golden Luchi.

INGREDIENTS
  1. Baby Potatoes ... 12 , peeled and half boiled
  2. Onion ... 1 large
  3. Garlic ... 5-6 cloves
  4. Green Chili ... 5
  5. Turmeric ... 1/4 tsp or more for color
  6. Sugar ... 1 tsp
  7. Cardamom , cloves ... 1/2 tsp , whole
  8. Cashew nuts ... 1/2 tbsp
  9. Fresh Cream or Malai ... 2 tbsp
  10. Milk... 2 tbsp
  11. Oil ... 2 tbsp , and for frying
  12. .... serves about 4 persons
DIRECTIONS
  1. Deep fry the baby potatoes with a pinch of salt and turmeric, till golden brown and keep aside.
  2. Grind onion , garlic, green chili to a paste and keep aside.
  3. Grind cashew nuts , fresh cream , sugar with 2 tbsp milk and keep aside.
  4. Heat oil in a kadai, add cloves , cardamom and let splutter.
  5. Add onion paste and saute' for 3 minutes in low heat.
  6. Add cashew paste and saute' for another 2 minutes.
  7. Add fried potatoes , 1/2 cup water and cook for 8-10 minutes ,in low heat , or till done.
  8. Remove from heat and serve hot with luchi or phulka.
