Gobi Paratha

Cauliflower grated and seasoned with dry roasted coriander seeds , is stuffed to make golden crisp parathas. This can be enjoyed of its own or with pickles.

INGREDIENTS
  1. Cauliflower...1
  2. Coriander seeds...1 tbsp
  3. Coriander leaves ...2 tbsp , chopped
  4. Turmeric... 1/4 tsp
  5. Red Chili Powder...1/4 tsp
  6. Salt...to taste
  7. Oil ... 2 tbsp or to taste
  8. Whole Wheat... 1 & 1/2 cup
  9. ....makes about 8 parathas
DIRECTIONS
  1. Mix whole wheat with a pinch of salt , warm water and make a soft dough.
  2. Dry roast coriander seeds , lightly crush and keep aside.Grate top flower part of a cauliflower , leaving the stem aside.
  3. Heat 1/2 tsp oil in a Kadai. Add grated cauliflower,crushed coriander seeds, red chili powder , turmeric , salt to taste and saute in medium heat for 3 minutes or till done.
  4. Add chopped coriander , cook for another 1 minute, remove from heat and keep aside.
  5. Take a portion of the dough.Make circular shapes by pressing with your palm or with a rolling pin.
  6. Stuff liberally with cauliflower mixture , secure the edges , sprinkle with wheat and roll into parathas.
  7. In a frying pan , bake the parathas with or without oil , and serve yummy with raita or pickles.
