Mooli Ka Paratha
A pan fried Indian bread belonging to Punjabi cuisine , hot Mooli Paratha is a relish during cold winter mornings. In this recipe Indian bread made with whole wheat is stuffed with grated radish with very minimal seasoning.

INGREDIENTS
- Radish... 2 cups , grated
- Nigella seeds or Kalonji...1/2 tsp
- Green Chili...4 , grated
- Whole wheat...2 cups
- All Purpose flour...1/4 cup
- Salt...to taste
- Oil...very little
- ...makes about 5 parathas
DIRECTIONS
- Mix whole wheat , all purpose flour , pinch of salt with lukewarm water and knead into a soft dough.
- Cover the dough with damp cloth and keep for 15 minutes to allow the protein in all purpose flour to stretch.
- Heat very little oil in a Kadai , add nigella seeds and saute till mildly aromatic. Add grated radish , green chili , salt to taste and cook covered for 5 minutes in medium to low heat or till done.
- Divide the dough into equal portions , stuff with radish filing and roll into parathas.
- Drizzle a pan or tava with few drops of oil and pan fry the parathas to serve.
